This is a great last minute recipe

Because you don't need to marinade the chicken for long, just make sure to take the chicken is out of the fridge for a few minutes so it's not super cold. Put the Chicken in a shallow bowl and pour over the marinade, let it sit while you turn on your Coyote grill and prepare the salad or sides we recommend below. Put it on the very hot grill (450/500 degrees) and cook each side for 6 minutes. It will darken perfectly on the outside and juicy inside. Yummy!

Ingredients:

  • Chicken Breasts {Out of the fridge for a few minutes, so not too cold}
  • Marinade: 1 cup Balsamic Vinegar, 2 tbs Olive Oil, 1/4tsp Red Pepper Flakes, 1/4 tsp Salt

Salad recipe:

  • Kale or lettuce of your choice chopped in bite sizes (The key to a good salad is not too much lettuce so each bite is well balanced)
  • Hard boiled Eggs, Tomatoes, Avacado, Walnuts, Dried Cranberries, Carrots, Cucumbers, Feta Cheese, {Bacon Bits if you'd like}
  • Salad Dressing: Splash of Balsamic Vinegar, Splash of Olive Oil and Salt and Pepper

If not on a salad here's a Side Suggestion:

Grilled Veggies:

  • Lightly coat your Veggies with Olive Oil and Salt and Pepper and put on the grill while your chicken is grilling.
